Curry goat

My friend send me this...

Jamaican Curried Goat
3 pounds goat meat, cut in cubes
Vinegar
Water
2 tablespoons curry powder
1 1/2 teaspoons salt
1 teaspoon black pepper
1 tablespoon (more or less, depending on taste) crushed red pepper
1/2 teaspoon thyme
5 cloves garlic,minced
2 scallions, sliced
1 onion, sliced
2 potatoes, cubed
2 carrots, sliced
1. Wash meat in water and vinegar. Dry with paper towels. Place meat in a bowl and season with curry powder, salt, pepper, thyme, crushed red pepper, garlic, scallion and onion. Let marinate for at least 30 minutes.

2. Place meat and marinade in a large heavy pot. Add enough water to cover meat. Heat to a boil, then lower heat to simmer and cook, covered, 1 hour.

3. Add potatoes and carrots. Simmer uncovered until the gravy thickens and the vegetables are cooked.

Wonder if it's as great if use lamb instead. I dont know about you, but I do taste the different between goat and lamb and I got no butcher store sell goat at all. I suppose have to just settle with lamb is it!!! Shrugs!
